微波殺菌設(shè)備主要用于粉狀、顆粒、片狀等食品、藥品、營(yíng)養(yǎng)品、糧食制品、農(nóng)副產(chǎn)品、牛肉、肉脯、方便面、速食品、米粉的干燥、殺菌,杏仁、花生、紅棗、桃仁、板栗的烘烤、膨化、殺菌、脫皮,醬菜、鹵味、各種肉制品小包裝的防霉、殺菌、保鮮。

微波殺菌設(shè)備是利用了電磁場(chǎng)的熱效應(yīng)和生物效應(yīng)的共同作用的結(jié)果。微波對(duì)細(xì)菌的熱效應(yīng)是使蛋白質(zhì)變化,使細(xì)菌失去營(yíng)養(yǎng),繁殖和生存的條件而死亡。微波對(duì)細(xì)菌的生物效應(yīng)是微波電場(chǎng)改變細(xì)胞膜斷面的電位分布,影響細(xì)胞膜周?chē)娮雍碗x子濃度,從而改變細(xì)胞膜的通透性能,細(xì)菌因此營(yíng)養(yǎng)不良,不能正常新陳代謝,細(xì)胞結(jié)構(gòu)功能紊亂,生長(zhǎng)發(fā)育受到抑制而死亡。此外,微波能使細(xì)菌正常生長(zhǎng)和穩(wěn)定遺傳繁殖的核酸RNA和脫氧核糖核酸DNA,是由若干氫鍵松弛,斷裂和重組,從而誘發(fā)遺傳基因突變,或染色體畸變甚至斷裂。

實(shí)踐證明:利用微波可以在較短的時(shí)間內(nèi),或在較低的溫度下,在物料的內(nèi)部和表面同時(shí)得到常規(guī)方法難以達(dá)到的殺蟲(chóng)或殺菌效果。 國(guó)外在微波殺蟲(chóng)方面進(jìn)行了大量的研究,實(shí)踐證明當(dāng)農(nóng)產(chǎn)品本身溫度達(dá)到55℃-60℃時(shí),其成蟲(chóng)、幼蟲(chóng)、蛹和蟲(chóng)卵已全部殺滅。

Microwave sterilization equipment is the result of the combined effect of the thermal effect and biological effect of electromagnetic field. The thermal effect of microwave on bacteria is to change the protein, make bacteria lose nutrition, reproduction and survival conditions and die. The biological effect of microwave on bacteria is that microwave electric field changes the potential distribution of cell membrane cross section, affects the concentration of electrons and ions around cell membrane, thus changes the permeability of cell membrane.
